During the boss fight, the gargoyle's tail WILL grow back between fights if you die, so it will be at full health. A good strategy once the second appears is to wait for him to use his fire breath, and then quickly run to the opposite side of the building.  The original gargoyle will fly after you, and the second will hold back for a little bit.  This will give you time to get some hits in on the first one without worrying about the other.
